De nouveaux composés antioxydants ont été identifiés dans des aliments comme l’huile, le miel ou les noix, moyennant deux techniques analytiques

Des chercheurs de l’UGR sont arrivés à identifier et à caractériser, pour la première fois, différents composés antioxydants dans des aliments comme l’huile, le miel, les noix et une plante médicale dénommée Teucrium polium. Pour cela, ils ont employé deux techniques nouvelles, l’électrophorèse capillaire et la chromatographie liquide à haute résolution, qui leur ont permis d’identifier et de quantifier une grande partie des composés phénoliques de ces aliments.

Des aliments fonctionnels comme l’huile, le miel et les noix, ainsi qu’une plante médicale dénommée Teucrium polium, sont capables d’apporter différents bénéfices à la santé, de sorte que leur étude présente un grand intérêt. Parmi les composés qui procurent aux aliments ces caractéristiques fonctionnelles, se trouvent les composés phénoliques à grand intérêt dû à leur pouvoir antioxydant qui les dote d’un effet chimioprotecteur chez les êtres humains et leur confère une forte influence dans la stabilité à l’oxydation que présentent les aliments. C’est la raison pour laquelle, d’après les scientifiques de l’UGR, « leur identification et quantification sont un bon moyen pour caractériser les aliments qui les contiennent. »

Ce travail a été réalisé par Mme Ana Mª Gómez Caravaca, et dirigé par les professeurs M. Alberto Fernández Gutiérrez et M. Antonio Segura Carretero, du Département de Chimie Analytique de l’UGR.

Les scientifiques soulignent que les composés phénoliques possèdent une forte capacité antioxydante, et ont de plus une forte influence sur les propriétés organoleptiques des aliments. C’est pour cela que des études comme celle-ci présentent un grand intérêt, vu qu’il est possible de quantifier leur présence dans les aliments, et que l’on peut même déterminer lequel parmi eux présente une activité majeure, et quelle est son activité concrète.

Fraction phénolique
Cette recherche a démontré le potentiel de ces techniques de séparation, identification et quantification de la fraction phénolique de matrices végétales, tout en mettant au point des méthodologies appropriées à cette fin et, dans le cas de l’huile d’olive, en étudiant quelques paramètres technologiques qui concernent le profil phénolique.

L’information obtenue par les scientifiques de l’UGR est très utile parce que ces composés présentent de nombreuses propriétés bénéfiques pour la santé. Il a été largement démontré qu’ils ont un fort pouvoir antioxydant et sont capables d’influer positivement sur l’organisme en prévenant l’apparition de certaines maladies (diabètes, obésité, maladies cardiovasculaires, cancer, hypertension artérielle, etc.).

Les analyses ont été menées à bien moyennant les techniques séparatives d’électrophorèse capillaire et de HPLC couplées avec différents types de détecteurs (UV-Vis, MS, RMN). L’électrophorèse capillaire couplée avec une spectrométrie de masses s’avère innovatrice vu qu’elle n’avait jamais été employée auparavant pour l’analyse de la fraction phénolique du miel et des noix. De plus, ces méthodologies ont, pour la première fois, permis d’identifier certains parmi les composés phénoliques présents dans ces aliments, ce qui présente un grand intérêt dû à leur possible action antioxydante et salutaire dans la fraction phénolique.

Les résultats obtenus à partir de la thèse de doctorat ont donné lieu à neuf publications dans des revues internationales, dont Electrophoresis, Journal of Chromatography et Journal of Agricultural and Food Chemistry.

Spain hosts International Symposium On Sense Of Humour

Spain hosts this week, for the first time in history, the international symposium on humour and laughter, where scientists and experts from four continents will discuss the latest advances and research of this field of study.
The ninth edition of the \’International Summer School and Symposium on Humour and Laughter: Theory, Research and Applications\’ is being hosted by the University of Granada, and they will analyse the relationship between sense of humour and different fields such as anthropology, sociology, medicine or philosophy.

According to the Professor of the University of Granada Hugo Carretero de Dios, «This is a dimension consubstantial to human beings which has traditionally attracted the attention of researchers of different research fields», says the UGR Professor.

The «International Summer School and Symposium on Humour and Laughter» is held every year in a different place of the world. This event also intends to assure that «those people who are doing research into the field of humour work on up-to-date information and tools with scientific support».

The event is taking place at the University of Granada and has been supported by the Mediterranean Centre of the UGR and the Health Department of the Andalusian Council.

Sexistische Witze schüren Gewalt gegen Frauen

Sexistische Frauenwitze sind nicht harmlos – sie fördern gedankliche Mechanismen, die Gewalt gegen Frauen rechtfertigen. Das berichten Forscher der Universität Granada http://www.ugr.es im Journal of Interpersonal Violence.

Aufschluss darüber gab ein Experiment, in dem männliche Studenten per Zufall entweder eine Serie von Witzen anhörten, die Frauen erniedrigen, oder belanglose Witze ohne sexistischem Inhalt. Unmittelbar darauf wurden die Probanden mit Szenen konfrontiert, bei denen Gewalt gegen Frauen in unterschiedlichem Schweregrad ausgeübt wurde. Als man sie befragte, wie sie jeweils reagieren würden, zeigten sich je nach Gruppe Unterschiede: Versuchspersonen, die zuvor frauenfeindliche Witze gehört hatten, tolerierten Aggressionen gegen Frauen weitaus eher als die Vergleichsgruppe.

«Indem sexistische Witze auf die Verspottung des anderen Geschlechts hinweisen, machen sie entsprechende Gedächtnisinhalte kurzzeitig besonders verfügbar», erklärt die Sozialpsychologin Andrea Abele-Brehm von der Universität Erlangen http://www.sozialpsychologie.phil.uni-erlangen.de im pressetext-Interview. Sexistisch seien Witze insofern, als sie Stereotype über das andere Geschlecht übertreiben und es auch lächerlich machen. Traditionelle Geschlechterrollen, die der Realität häufig hinterher hinken, würden damit im Bewusstsein aufrecht erhalten. «Tatsächlich ist es möglich, dass Menschen unmittelbar nachdem sie einen sexistischen Witz gehört haben das andere Geschlecht kurzfristig anders bewerten», so die Sozialpsychologin.

Der Effekt, den ein sexistischer Witz im Gehirn auslöst, sei eher kurzfristig, so Abele-Brehm. Langfristige Verhaltensänderungen seien erst dann denkbar, wenn man ständig derartigen Information ausgesetzt sei. Dass es mehr sexistische Witze über Frauen als über Männer gibt, sei einfach erklärbar. «Männer erzählen mehr Witze als Frauen, denn sie merken sich Witze in der Regel besser.»
